The sturgeon is the sort of fish cavemen could identify with. But the sturgeon is much older than that. Sturgeon were alive back in the days of the dinosaurs. Sturgeon are any of the 25 species of fishes of the family Acipenseridae including the generaAcipenser, Huso, Scaphirhynchus, and Pseudoscaphirhynchus. They are native to temperate waters of the Northern Hemisphere. Sturgeon have an interesting way of eating. They have four sensitive, tactile barbels that they drag over the bottom of the river or lake in search of invertebrates, small fishes, and other food. Instead of having scales like many other fish do, they have bony plates called scutes. If you were ever fishing in a river in southern Russia or Ukraine you'd be likely to get a bite from a sturgeon. You might have a little trouble reeling it in, though, because sturgeon can grow to be 7-10 feet long. Some can even reach 500 pounds! So don't fall overboard when trying to pull in your monster-sized catch! Sturgeon are also found in fresh waters in North America. If you travel south of the equator you won't find any naturally occurring sturgeon living in these regions. Other Interesting Facts -I'll bet you also wouldn't expect that the sturgeon fish may very well outlive you! They probably live the longest of all fishes, as they can live to be well over 100 years old. -Before 1800, the swim bladders of sturgeon were used as a source of isinglass, which is a form of collagen. In the past this form of collagen was used for the clarification of beer, and also to preserve animal skin that was used to writing on. -Many religious groups forbid eating surgeon. For example, the Jewish law of kashrut only permits the consumption of fish with scales, therefore the sturgeon is forbidden because of their ganoid scales instead of the permitted ctenoid and cycloid scales. -If you were to travel to the United Kingdom, sturgeon are considered royal fish, and when taken they become the personal property of the monarch of the United Kingdom as part of his or her royal prerogative. -Twenty-six species of sturgeon are on the IUCN Red List of Endangered Species, with 15 of these species listed as Critically Endangered with their populations decreasing. The sturgeon is threatened due to overfishing, poaching, water pollution, and damming of rivers.
